Dad's Lemon Butter

8 Cups of sugar
8 Eggs
750g Canola Spread (1 ½ lb)
2 cups lemon Juice

Stir eggs into sugar, make sure they are well mixed
Stir in Canola until well mixed
Add lemon juice

Put saucepan into another with boiling water.  The water should be about 1" or 2.5cm from top of outer saucepan.  This may need topping up from time to time with extra boiling water.
Stir ingredients more frequently at first, until all of the Canola has melted.  Keep stirring occasionally.
After about ½ to ¾ hr the mixture should start to thicken, usually there has been a slight froth on the top and this will disappear about now and reveal the real yellow of the final mixture.
test the 'setting' by putting a teaspoonful onto a saucer and placing it in freezer for 5 mins.  If set enough this should not run on the saucer.

Place the inner saucepan on a lower heat, directly on the stove top for about 2 mins, stirring constantly.  Remove from heat and test on saucer before bottling.

Bottles should be clean and have tight fitting tops.

After filling and allowing to cool, a small piece of Glad Wrap over the top before sealing.
